Cedar Plank Steelhead with Lemon Pesto Butter

Directions

  1. Soak cedar plank in water for at least two hours prior to cooking; drain. Rinse Mt. Lassen Steelhead Fillet and pat dry. Lay the steelhead on the plank and season to taste with salt and pepper.

  2. Cover the grill and cook for about 15 minutes at 300 degrees or until plank chars and fish reaches 150 degrees on an instant read thermometer.

  3. While the fish is cooking, mix the remaining ingredients in a small bowl. Spoon the mixture onto the cooked fish, serve immediately. Garnish with lime wedges.
