This is a 20-30-ounce rainbow trout (Oncorhynchus mykiss) that was raised in mountain spring water around the base of Mt. Lassen. Mt. Lassen trout is very mild flavored with a firm texture.  It easily takes on the flavors and spices used while preparing it.  It can be grilled, baked or pan-fried.  This fish is also amazing smoked.  If you love your smoker, try smoking a batch of trout for salad toppers, spreads or simply enjoy with a mild cracker, possibly with a little cream cheese as well.
 
In order to properly harvest our fish, we require that Mt. Lassen Trout and Steelhead Fillets be ordered by noon on Monday for pick-up on Thursday.
